This is a colorful, delicious pasta salad that can be eaten cold or hot. It includes black beans, cherry tomatoes and green pepper tossed with penne pasta. This uses gluten free pasta.

You will get a better result if you use very ripe, fresh tomatoes rather than canned. If you can spare the calories, replacing half a cup of stock with white wine is also lovely.
