Chicken with whole wheat pasta, mixed with creamy alfredo sauce, sweet peas and bacon bits. Alfredo sauce is made with skim milk and light margarine.

This is based on "Greek Pasta Salad" recipe from "Rose Reisman Brings Home Light Pasta" and also a dish that was on the Kelsey's menu a few years ago. I often serve chicken or salmon with this. This dish is good hot or cold.

I LOVE Olive Garden's Zuppa Toscana - this recipe replaces the cream with 1% milk, the potatoes with white beans, and the Italian sausage is turkey sausage.

One of my families favorite soups.

This is a great dish for an electric skillet and it is fast to prepare and quick to cook. Also good for vegetarians as a main dish.

A recipe that came in the mail from Kroger in a coupon packet. I think you could swap out any cheese filled pasta for the borsetti if you can't find it

I just made this one up as I went along. It tastes great. My first creative attempt at healthy cooking. Hope you try it and like it.

Italian shortbread cookie for a celebration treat. Though I MUST do a taste test, I won't be eating these, they are for Christmas Gift Boxes.

This is delicious with a serving of salad, pasta and Italian breadsticks.
