I'm lucky enough to have a 5-year-old who can't get enough vegetables. Especially eggplant. Add in a mom who wants to lose weight and an Italian dad with diabetes and we are a family who can rock a lasagna chock full of veggies. You never even miss the pasta.
This recipe I originally saw on Lifetime's Cook Yourself thin and it included Mushrooms which I DO NOT LIKE. I modified it by taking out the mushrooms and adding more spinach. It's always a hit when I make it!
