Instead of having a greasy, battered coating, the tofu "steaks" in our revamped Parmigiana are breaded and lightly pan-fried in just a small amount of oil, then topped with part-skim mozzarella, fresh basil, and your favorite maranara sauce. This is a labour of love if you make everything in this recipe (believe me, I did it!) but the result is SO worth it. I broke my experience into 3 days of work - one day I roasted the chicken, the next I roasted the bones and made the stock, and today I finished it all! It's a hearty, healthy and oh-so-rich meal you don't have to be sick to love! Makes 6 big bowls!

I have never been a fan of popcorn but I thought I would give this a try. I like spicy food (can you tell?) so I added some cayenne.

If you are doing to dehydrate it, the recipe calls for 6 heads. Adjust your spices accordingly.
I set out with the goal of making our own sandwich bread each week instead of buying it from the store. This way, I control what goes in it, how healthy it is, and the cost! I found a couple different base recipes and then I combined and tweaked them. The first batch turned out excellent, having a great sandwich bread texture! It is still a work in progress however, as I would like to increase the amount of whole wheat flour and decrease the white flour.
Substituting applesauce for butter or oil makes this bread extremely low calorie and very tasty. I make rolls out of this as well and they're always a hit! You can substitute sugar for honey. My original recipe called for milk powder, but I have substituted the coconut milk powder so it can be used by the lactose intolerant.

Made with soy milk. Use your blender! You can easily halve the recipe, or make the whole thing and freeze some for weekday breakfasts. For a real treat, sprinkle chocolate chips on top of the each pancake just after you put them on the griddle.
