This is a recipe titled "Parmezano Sprinkles" from the Ultimate Uncheese Cookbook. It is free of gluten, corn and nuts. You can also make it soy-free by using chickpea miso instead of light miso. It has more the texture of parmesan cheese than the taste and will give a nice crustiness when sprinkled on dishes that are baked.
