This is my answer to this dilemma; this recipe is not only high in fiber, high in protein, moderately low fat, and quick and easy, but it is also a great way to end your day; it could make a great lunch dish as well. It yields a portion for one, but it can be easily doubled if necessary. I would love some feedback! Any suggestions?
Great way to have home made preserves, sugarless (not sugar-free). You can always warm up your individual serving and add 1 teaspoon sugar or your choice of artificial sweetener. This way you give everyone a choice. Not everyone likes artificial sweeteners. You can also try your tablespoon (1 serving) with 1 teaspoon or honey or maple syrup. Please note: these calories and the sugar added have to be counted separately.
This tuna salad has only five grams each of fat and carbs, and 26 grams of protein. I use half lowfat mayo and half greek yogurt because I prefer the milder flavor and it doesn't make much of a difference in my opinion. Feel free to use 2 tbsp of greek yogurt instead!
I like to add in freshly chopped herbs. I don't list them in the ingredients because it's a matter of taste and many will do. My favorites are dill, parsley and chives; they can be used individually or in any combination.
