It sounds like an odd combination, but it works. You could lightly saute fish fillets and top them with the pesto then the grated cheese if you so wish.

The first thing that you notice is the soft aroma as it's cooking. The yellow of the squash invites you to taste the tender turkey & the flavorful herbs. There is a slight crunch from the squash when you bite into it.
Recipe modified from the Low Carb Friends forum. I made it with almond flour instead of soy and applesauce instead of butter. Fits 2lb bread machine. Cut recipe in half for one pound machine. Only 3.3 grams carb per piece!

A crustless quiche - VERY good. I didn't add the walnuts (didn't have any handy). I added a little salsa on the side...even better! Oh, and for those who don't like blue cheese...you don't even taste it in the recipe.
