Great on chicken tacos or as a side with summer meals.
This is a "throw together" kind of receipe. and can be done with whatever veggies you like. If I had spinach, I would have thrown that in too...you can also throw in other ingredients but I prefer to use just the veggies as the base and calculate whatever else separately. It's great on your favorite bread. I used the mini pita's and toasted them up nice and crisp.. I also added some feta and chopped shrimp (not calculated in this recipe). 1/2 cup topped two small pita's nicely.
I love making this for lunch at work - it is filling and has lots of protein and fiber!
This uses flax seed and parmesan cheese instead of bread crumbs or crackers.
