Diego's express burrito (close approximation -- doesn't include oil or spices). No sour cream, substitute brown rice for Spanish white rice.
I made my own version of a "cream sauce". Typically it is made of flour milk and sour cream. I subbed greek yogurt for the sour cream. Also, I didn't use the flour, but you could to make the sauce thicker (my sauce was thin). I also used butter buds but it is not factored in to the nutritional info because I could not find it. I think it may be like 10 cals per tbsp.
Chicken tortilla soup is pretty much the only soup my boyfriend likes, and this recipe is so tasty, he doesn't even notice there aren't tortillas! It's restaurant quality delicious!
Short prep time (maybe 15 min?) and then let simmer for 2 hours on stovetop.

Empanadas are sweet- or savory-filled turnovers wrapped in pastry. The crust used in this recipe is made from reduced fat Bisquick, which makes a nice crust. The filling is a tantalixing sweet-spicy (but not hot) chicken mixture.
My daughter loves these! They can be used as a side dish, snack or vegetarian main dish.
This isn't authentic, but it's a really tasty casserole. I use tortilla chips for ease. ETA: Changed # of servings from 4 to 6. You could probably get even more with a salad and a side dish.
