I took a 5 star black bean soup recipe from this site, used Pintos (ran out of black), added sausage and corn. Yum.
I'm not good @ rolling enchiladas, so I find this method less time consuming, and it tastes the same, so why not. :)

I listed this under beef & pork because it can be made with super lean ground beef or ground sirloin, I just chose to use 99% lean ground turkey & computed it this way.
