My family loves this recipe....not sure where I got it but I have been making it for years.
You can always use fat free sour cream and low fat cheese to cut calories even more for this recipe. I wanted to calulate what I had on hand.
These are really quick to make and extremely easy. Taste great! Good for lunchboxes, kids love them. A serving is half a quesadilla sandwich. Could be healthier if no cheese was added but I prefer them cheesy
I used the salami because is what I had on hand. But you can substitute for a healthier lunch meat. Only 70 calories for each salami slice.
My coworker Pat gave me this recipe...I doubled everything and added about 2 cups of skinned baked potatoes because I think I only had about 10 oz of chicken. It's delicious! I used my 5.5 qt crockpot, slow cooked on warm for 12 hours (my crockpot runs hot tho!) 5.5 qt = about 22 cups = about 2 old WW points or 130 cals/ 3 grams fat/ 4 grams fiber!
