There are a lot of steps to this flavourful, vegan pasta dish, but you can do a lot of the prep ahead of time. The onion / garlic puree can be easily made up to a week ahead, and the chickpeas will keep their crunch for a day or two if kept in a container like a cookie tin - NOT a plastic bag! The toast takes only minutes (though it bust be served immediately), and can be done at the same time as the chickpeas by adding the bread tray to the oven when there are 15 minutes of roasting time left.

This recipe is adapted from one found on www.smittenkitchen.com. Makes 8 servings of 1 cup each. The ingredients are approximate, there is no need to be precise with this. Pretty much just add everything to taste! (This is also great as a salsa like dip for light tostito chips!) For more visual effect, use 1 green pepper and 1 each of red, orange, and yellow.

I made this a couple years ago for Thanksgiving and my family has been asking for it again ever since. So I made it for this year's Thanksgiving get-together, but I lightened it up some. I could have bought fat-free or lower-fat mayo too, but it was out of my price range this week! :(
