Caramel sauce is great over ice cream or in coffee drinks. This version is a great alternative to store-bought caramel sauces loaded with high fructose corn syrup. And because raw sugar contains molasses, the caramel flavor is more intense and yummy.
After reading many recipes for salsa chicken, I came up with this easy recipe for a single serving of salsa chicken, cooked in aluminum foil in the oven.

I always use an egg glaze. The scones look more attractive. Use an egg or liquid egg white and brush on tops before baking.
Scones need a HOT oven 400 degrees. I line my large cookie sheet with Parchment paper. I use it several times over. I make many batches and freeze them to store. Microwave about 14 seconds to thaw. Depends on power.

You can also substitute chicken breasts instead of thighs, you'll need to adjust the calories too.
A traditional New Zealand dessert. So amazingly delishious and light. You could make it with light coolwhip to lighten up on the calories, but the fresh cream really is a great treat. Perfection. The meringue forms a crisp shell with a great thick layer of marshmallowy goodness inside.

This dish worked out really well, and I was surprised at the low calories per serving. The mustard greens are a nice mix of textures with the stems and leaves cooked together. Its very filling and full of leafy green goodness!!! This could easily become a main course by adding some tofu or chicken to the stir fry. We had it with a side of grains and some pan seared Ahi Tuna.

This recipe is a modified Keema, or ground meat casserole dish, with extra garam masala and other ingredients, especially spices, added. Don't add more spices! AFTER you've eaten your first serving, you'll have a good idea of the heat level of the spices already in this keema.
We ordinarily would never buy veal, but we picked up this 'meatloaf mix' of ground meat at the market & didn't realize it contained veal until afterward. Using beef/pork without the veal will not substantially change the nutritional values.
