A quick, yummy breakfast (or dessert) for one person (you can adjust as necessary for more people).
There are pockets of time while these cook that you can prepare other dishes. Can season with your favorite salt-free seasoning (e.g., Mrs. Dash) rather than the onion powder and parsley.
Like a chimichanga but without the frying and high fat. Recipe is based on one from Sam Zien with a couple changes.
This meal can be on the table in less than 1 hour! Leftovers make a GREAT lunch!!
home made stroganoff with sour cream and mushrooms. For my family to use, we're all tracking our food! ;)
This is our favorite -- we gave up on the noodles cause they always seemed to get soggy. Love it with rice. We use wild rice sometimes, that's great too. You can pretty much add whatever you want, it's a great left-over soup.
I know it sounds simple, but it never occured to me until I saw it on another site. a great way to dress up an old favorite.
Stuffed peppers with 2 serivngs of vegetables and a protein serving... How can it get any better?
adapted f/ Simply in Season Cookbook. A rich cake--great for special occasions. Please note that this recipe makes 16 servings--this is a very rich cake, so a small slice is totally satisfying (I've even cut it into 24 servings before with no complaints). It's a rich, satisfying dessert despite it's simplicity (or maybe because it's so simple!). Of course, the ganache filling can be skipped, if you prefer another. I generally frost the cake with a simple cream cheese frosting (recipe not included). Depending on how thick you make the filling layer, you may have extra ganache, which can either be drizzled over the cake OR you can let it chill till almost hard, roll it into balls, roll in cocoa powder, and viola! you have truffles.
