Original recipe called for quinoa, but I didn't have any in the house. Quite spicy with the cayenne.
takes a bit of time but so good you wont notice its low-calorie. you can omit the brocolli slaw without any real change in flavor/ texture. the cole slaw was just meant to save time, but shredded or julienne carrots and finely sliced cabbage would work great. You may want to halfthe recipe unless you have a huge frying pan.
Turned out delicious! Only about 15 calories per mushroom, depending on how large of a mushrooom you use. The filling comes out firm even though it looks a bit runny as you are filling the caps.

This is a recipe I came across while living in Italy many years ago. I have added some of my favorite vegetables to it to "beef" it up and make it more hearty. It is one of my family's favorites, great for a cold fall or winter night.

As a veggie I need my complex carbs to start my day....oats, banana, nuts, berries, yogurt. YUM! A good serving of fibre too! You will definitely be left satisfied.
