This is a really tasty, easy to make receipe that everyone in the family loves. I serve it with cornbread.
My husband loves the coconut filling in candy bars like Mounds and Almond Joy. I had made some candies like that at Christmas and got to thinking that maybe I could come up with a low carb version that I could have. When I handed the first one to my husband, his response was "These taste like cheating!"

Here's our healthy substitute! 1/3 less calories, 1/2 the fat, 1/3 the sodium, 1.5x the fiber, 4.5x the protein, 25% less carbs, and ONLY 10% OF THE CHOLESTEROL! McDonald's foods are full of trans-fats! This stuff can be deadly! If you love a breakfast sandwich like I do, you have to try this. Guarantee this will keep you feeling full longer and will taste better with all these gourmet ingredients.
I make this for lunch or dinner when I am in a hurry. It is very filling and low in calories and fat.
I sometimes substitute the Red Pepper Flakes for Fenugreek or Curry Powder because my daughter doesn't like "spicy".
I also like to throw in cooked chicken or shrimp with the vegetables to turn it into a complete meal.

My mom has made this for years. It's a favorite in our house, and it's so easy to prepare. You make it in the crock pot, so you can put it on in the morning before work, and by the time you get home it's done. I was very pleasantly surprised to find out that it's a relatively low-cal/low-fat meal! And so delicious. The pork chops are so tender, they pretty much fall apart.
