This is NOT a pretty white potato corn chowder. The Kitchen Basics Vegetable Stock is a dark stock and the addition of the paprika and cayenne make this a rustic, dark chowder.
My version of Olive Garden's Minestrone. I love black beans so I substituted them for half the kidney beans. Rinsing the beans reduces the amount of sodium in the recipe. Sometimes I add a couple tablespoons of parmesan cheese when I get ready to eat.
This soup freezes really well.

A cold dish that tastes great for lunch. Not for those on low sodium though!
