This is a very easy side dish to prepare when you're pressed for time and didn't plan anything. Just keep a few cans of assorted beans in your pantry and have some fresh produce on hand, including lemons or limes for the vinaigrette/dressing. Meat and cheese are optional.
I throw this together when I need a low fat but high carb and good protein side dish for my lunch or dinner.
Takes 15 minutes to make. Easy and good. I used the seasoned black beans, but I'm sure the plain kind would be fine.
