This Vegetable Beef(Turkey) Soup is great to freeze and reheat. It can be vegetarian, without the meat, and is still great!

This soup uses dried lentils and split peas in multiple colors for layering in jars. Makes a pretty gift with recipe card attached.
Comfort food for me. Just thought I'd share the recipe since I want it in my book and accessible to my nutrition center. Plus it's lower in fat than others.
...if you can get fresh mint, it is SO WORTH using it instead (in that case, use 3 Tbsp.)
Super tasty and perfect with romaine salad to accompany Asian food. Eat to your heart's delight with only 34 calories per serving and one of the healthiest oils around!
This is South Beach appropriate. Even more so if you use ground turkey instead of beef. But, I like the flavor of beef. :-)
This homemade hot and sour soup wont disappoint you. Making the stock fresh adds to the texture and enjoyment, but canned broth will do. Keep some hot chili oil and lemon on hand to adjust heat and sourness.
This recipe is a combination of the chili flavor, stew and slow cooker most american will recognize, for me it is a typical winter dish made back at my country. Usually my mother would add around 7-8 ounces of ground beef to this dish but i decided to keep it out this time. Another thing i will always mention about this dish is that it taste better after a month in the fridge. The flavor is stronger and deeper . Lentils are a great source of iron, they dont need soaking before cooking, they are cheap and available in most supermarket. Around one cup of uncooked lentils makes 3 cups of cooked lentils
This warm, cheesy side dish pairs tomato and basil with mozzarella and Parmesan cheeseāa match made in heaven if there ever was one! Serve it with chicken, steak, or fish.
I love it , it is yummo.
