This is a fall & winter favourite! The low sodium broth is key. Great source of fibre and protein.
Okay, actually, this isn't exactly the one from the box. I changed the original recipe which called for salsa or tomato sauce to Rotel (because that's the best thing there is!), and I changed black beans to pinto beans because I knew I didn't have any black beans on hand at the moment.
This is a great homemade pesto with less olive oil than much of the commercial stuff. I grow basil during the summer and this is an excellent way to use it up and make something fresh!
My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.)
