This isn't really a light recipe, but it is definately tasty and a big hit when entertaining. It's my most requested dish.
This is a neat recipe I found on Allrecipe.com. Once again in my quest for low sodium foods I was amazed to see the quantity of Na+ found in the sauces(BBQ, salad, ketchup, etc.)this one isn't too bad because you can tweak the recipe.
This salad dressing is fantastic on spinach! Try making a salad of spinach leaves, green apples, and white cheddar cheese. Great for fall, and lots of vitamins!
Of course you can use any veggies you have on hand- I like the meatiness of the mushrooms.
I use frozen chopped onions and peppers for convenience.
A relatively healthy and very tasty soup that has a surprise ingredient ( peanut butter). People find it hard to guess the 'secret ingredient' until they know what it is...and then....the flavour becomes very apparent once they have been made aware.
Revamped version of San Juan PR's Marmalade Restaurant's famous white bean soup. The original recipe is so requested that the restaurant hands out copies of the recipe with dinner! Even with the lower stats, this soup is incredible! You could leave out the butter, but I don't think that replacing the bacon with turkey bacon would work well.

I modified this from the Joy of cooking. My Hubby (who's from PR) absolutely LOVED this when I made it and has asked me to make it again and again...which is a big deal because he's not a soup person.
A quick and easy dip for potlucks, camping, parties or any other time. You can make add more spice with more hot sauce or make it runnier with more dressing.
I've been making this fruit salad for about 11 years now. My daughter loves it. It is her one true guilty pleasure, at 275 calories for a cup, it's understandable why. You could probably use another kind of whipping cream, and I have, but the results were not as good.
Make the meatballs several days in advance and freeze them. I prefer fresh basil, parsley, garlic, and fresh ground pepper for a more intense flavor. I also use sea salt (salt can be adjusted for taste and sodium restrictions).
***You need to plan a little bit ahead for this recipe. The beans have to soak over night or 4 hours using the quick soak method.
