This is a low carb supper soup. Not low fat, purposefully. Fats are allowed on this eating plan. Serving size is about 2 cups. I would have put more cauliflower in the soup if I had more and I would have used chicken broth if I had that. But this was made with what I had. Still turned out really good and very similar to the restaurant version.
Mix everything and make into meat balls. Place on Baking sheet and cook for 15 min. Put in your favorite sauce,
Growing up I loved Halupki (stuffed cabbage rolls) and learned to make them the "authentic" way.... However I am always in a hurry. So I came up with this way to enjoy the flavor without all the fuss. Hey -- You don't have to cut them up this way! I have made these a varitey of ways from using prepared spaghetti sauce to this version - we prefer this way.
Sauerkraut can be added (just add the sodium to your count for the day)

This a really good basic recipe adapted from one in usaweekend several years ago - I actually used low fat half and half, but couldn't find its calculations on here and threw out the container so the recipe I made had maybe 10 more calories per serving. Big servings which makes the calories not quite so bad.
