This was always my favorite way for my mom to cook fish. Very simple and a favorite in my house as well. I dont use as much seasoning as my mom does to cut back on sodium some.
I LOVE Shrimp Scampi. And I LOVE the lower calorie version that Wildtree nailed with their 'Scampi Blend' Seasoning. So, I decided I would try to make a Cod version as my 5year old does NOT like shrimp.
Finely mince the onions and celery and added to drained tuna. Beat egg slightly and add to mixture. Add Salt & Pepper (to taste). Add flax seed and oat bran. Mix well and drop into hot pan over medium heat. Cook until done 5-7 minutes.
Growing up as a kid I loved the noodle casseroles my dad would make. This one is made out of shirataki tfu noodles and surprisingly is very good. It gives me that creamy texture that I crave and feels like I am eating real noodles. Not to mention the addition of carrots, celery, onions, and mushrooms.
