I spent two years trying to imitate restaurant-style queso. I used all different kinds of special Mexican cheeses and combinations of cheeses to no avail. Finally, it dawned on me - a restaurant isn't going to spend big money to get an authentic Mexican cheese. So I bought a block of Land o Lakes American Cheese from the deli counter at Walmart (other brands work too - as long as it's the block version, not sliced, American cheese - white or yellow, they taste the same!). This simple ingredient made all the difference. As much as I hate giving away my secret to the world, I know there are others who want that great restaurant-style queso at home. You can add other ingredients as you like ... cilantro is great, as well as tomato after the queso is done cooking. All kinds of ways to make this your own. Have fun!

I like to make this to take to parties so that I know there will be something healthy for me to munch on. It's also a big hit - 4 out of 5 times, someone asks for the recipe!
These are really decadent, when you need that chocolate fix AND you can take them somewhere to share. BAD idea to make them for yourself though, they'll suck you in.
A great way to make home-made refried beans without the fat but all the flavors and same great texture... also quick and easy no need to soak overnight!

This recipe ‘sparked’ in my head out of necessity! Sometimes at the end of the day, with the help of my Nutrition Tracker, I realize that I need more fiber on that day. This is my answer to this dilemma; this recipe is not only high in fiber, high in protein, moderately low fat, and quick and easy, but it is also a great way to end your day; it could make a great lunch dish as well. It yields a portion for one, but it can be easily doubled if necessary. I would love some feedback! Any suggestions?
Makes you feel like your cheating but your not as it is high in protein and even has fiber.
