Great Summer Salad; interesting dressing - even the particular white bread, meat eating guy I live with likes this.
The calculator doesn't work well for greens! Actually I gather a dish pan full of swiss chard, beet green and kale our of the garden, the original recipe called for 30 leaves
bear in mind that ingredient calculations are approximate. the recipe is mostly just made to taste, so feel free to experiment! peppers and onions are mostly there for cruch and color, so sub whatever you like for them if you want.
A very tasty way to get a vegetable hit...use with anything. Chicken, eggs, corn chips, etc.
Add water first and blend half at a time...otherwise you might burn out your blender - these are really quite tasty, although a bit too soft, I will tweak it next time I make and I welcome your suggestions....
Frittatas are like omelettes, but with no flour ad with all the ingredients mixed together with the egg and not added as filling. The name comes from the fact it's normally fried in a pan, but in this lighter version, I'm baking it in the oven!

All credit to Taste of Home "Test Kitchen Makeovers" I used the filling recipe from that but used a reduced fat graham cracker crust instead of the recipe's ground pecan alternative-- I don't have a food processor and the graham cracker was easier and better IMO. If you only want one pie-- half the recipe :P! Math stuff..
The lemon has a nice tang, but it is overall sweet :)
