Got the idea for this on another site. It originally called for 4 whole game hens but I changed this to accomodate a more reasonable portion size. I also broiled the hens first to cut out the fat a bit and make the skin light and crispy. You can skip this step if you are short on time. Thanks Jean for the idea!
My mother gave me this recipe. At first I was scared because I was mixing creamy french dressing with cranberry sauce, but it is so delicious! I serve it over rice and a couple of vegies on the side.
Ingredients:
Green Peppers (bell peppers), .75 cup, chopped (remove)
Mushrooms, fresh, 5 medium (remove)
Salsa, 1 cup (remove)
Chicken Breast, no skin, 355 grams (remove)
*Extra Virgin Olive Oil, .5 tbsp (remove)
Garlic, 3 cloves (remove)
Onions, raw, 1 small (remove)
Tasty, spicy and low-calorie dish for all who enjoy casseroles instead of 'dry' food.

I won't lie this recipe is involved, but it is worth every bit of the effort! My best friend and I came up with this and our families request it once a week.
And the leftovers (when there are any!) are just as good!
You can adjust the spice to suit your taste by adding or removing jalapenos and purchasing spicy green enchilada sauce or mild.
I've also tried everything I can think of to reduce the sodium in this recipe but this is about it. If you have any ideas I'd love to hear them!
This is a GoodHousekeeping recipe I found online. Very healthy, and tasty. The sweet balsamic vinegar mixed with the tart cherries and pears compliment each other. This is a keeper in my house!
I modified one of our favorite recipes to make it more HCG friendly. It's still delicious! It does mix 2 veggies, so it is better for the Trudeau followers, not the Simeons.
