This is my first remake of our traditional Sunday night dinner - Eggs Benedict. I've started here by substituting extra light cream cheese for the cream. It worked great and tasted even better than with cream. Next week I'll try replacing the butter with a lighter spread to bring down the calorie count even more!
This has been one of my favorite recipes of all time, the only problem is the calories are enough for all day.
I love Gravy on my meats and sometimes I splurge and put on rice. I came up with this lower calorie option that way I can add a little more if I want to. Suggestions would be to add beef broth or Chicken broth for a little flavor.
My son has always love to cook. This was the first recipe he cooked at age 7. He loves it for breakfast, but I like it for dinner with a salad. My son is now 25 and a Pastry Chef at a 4 star restruant.

Betty Crocker's Classic Suddenly Pasta Salad with a few extras. You can make this with Kraft FREE Zesty Italian to save on fat & calories. (I just didn't have any on hand at the time of the recipe).
simple side dish that my husband loves. Don't expect anything fancy--it's a little bland--but it's quick and easy!
This makes a small loaf, so feel free to double the batch if you are unsure about halving an egg. Bake a double batch in a 12" x 6" pan for 45-50 minutes.

Terrific side dish; serve with any type of meat. Very healthy and really filling but low calorie.
Healthy, tasty zucchini bread that's a great quick breakfast or as an item in a brunch spread!
I first got the recipe from a Suzanne Somers site and have altered it a bit. My 3 year old ate almost 6 oz all my himself tonight. This is great as a side dish with meatloaf! I would cut the serving sizes down, though. I calculated it for 4 dinner size portions and we eat it with a salad or small piece of meat like grilled chicken. But you could make six servings and eat it with meat loaf. The nutrition would then be 169.1 cal, 9.2 fat, 9.4 carbs, and 12.5 protein. Yum, either way!
