I got this from an instructor at Curves. She has it quite often as her breakfast since she has to be at work early and doesn't have time to cook .
3 1/2 cups Diced Potatoes
2 tsp. Paprika
1/4 tsp Mrs. Dash (original)
2 tbsp Olive Oil
1 tsp Salt
Mashed Sweet Potatoes baked with cream cheese. Very tasty side dish, and great for Thanksgiving time!

I had a ton of zucchini and wasn't sure what to do with it. I tried the recipe and loved it. The first time I only used one egg and a quarter cup of cheese. It was enough for me but to serve to guests, I add more egg and cheese.
I adapted this from a Cooks.com recipe. Theirs had 2 cups of cream in addition to all the rest of the fat. So the amounts of the ingredients are very much adjustable.
