This is adapted from the cookbook, The Indian Slow Cooker.I had to adapt it to fit what spices I had on hand. I'm not sure what lentils I actually used...the bag just said lentils. I hope the nutrition facts are correct, there is no entry for dried lentils, cooked. I estimated 1/2c dry lentils=1c cooked.

Classic chicken stew that can be made in the slow cooker. I reduced the calories by subbing cauliflower for the potatoes and I can hardly tell the difference! I weighed all my ingredients before adding them to the slow cooker, so I have their approximate amount as well as the exact amount I used in grams.
I wanted to make salsa chicken in the slow cooker, but I had to make do with what I had on hand. It turned out amazing!
(The quick barley I added as an afterthought about an hour in because there was SO much liquid and I thought it would thicken it up and add some whole grains)
