A friend of mine brought this to a party and it was gone in minutes. Healthy, fresh and delicious!
I love this recipe. I added spinach because I'm not much of a salad eater and it's a sneaky little way to get an extra serving of my veggies for the day. Believe it or not... you can't taste the spinach or even tell it's in there. I make a large batch all at once and save some in the fridge. I haven't tried it yet, but I bet you could also freeze them like a fruit pop.
A favorite Hawaiian way to eat Spam is in the form of a musubi (pronounced moo-soo-bee, with no accent). It is a fried slice of spam on rice pressed together to form a small block, then wrapped with a strip of seaweed.

It's getting to that time of year where leaves change, apples are an abundance, crisp air and best of all the smell of fall. To me the smell of fall is baked pumpkin, apple pie and warm comfort food. Well we can have that in a more healthy way! Get that oven heated and try some yummy Pumpkin Granola! Take your fall apple, put on some Peanut Butter and top with some pumpkin granola! This granola is awesome with oatmeal, yogurt or by the handful! Great source of fiber and protein!! By the way, Holy Mother of Pumpkin! This is so good and clumpy!!! Enjoy!!
For when you live in the middle of nowhere and run to the convenience store because you just HAVE TO HAVE CHOCOLATE! (I know you all do this at one time or another!) In our area, the closest actual grocery store is 20 minutes away, and there aren't too many healthy options at the convenience store. This is a good sweet & salty snack.
