I use knorr vegetable stock to make this as well as a little white wine however the wine evaporates and the stock is minimal and will reduce upon cooking so I didn't include the calories for that. This is the recipe for the Tequila Cilantro dressing used at the Margeritas restaurant. It is delicious and easy to make.
Rinse beans, drain corn, chop celery and chicken - mix them together. In a separate bowl, mix dressing of sour cream, salsa, 1 Tbls cumin, 3/4 tsp. salt, 1/2 tsp. pepper. Serve over a bed of lettuce and with tortilla chips.
I could not find the Goya Empanada Disc to put into the ingredient category but it is 170 calories per disc. So please add this to the total calorie intake for each empanada. Enjoy and take away or add ingredients because I add to taste except the cheese.

I got this recipe from CooksCountry online but changed a few things, like getting rid of the crushed fritos and replacing them with small cut up corn tortillas to reduce the fat, and using medium grain brown rice instead of white. . 12 servings/ about 4.5 WW points (old system) per serving.
While in Guatemala earlier this year, Papa managed the near impossible (or so I thought.) This is to create a guacamole that Mama actually liked.
You see, Mama had lived in Mexico over a decade ago, and grown up in an East Coast city with loads of Spanish people and Spanish food around, yet never once tasted a guacamole that she liked. Which made this Mama very sad, as I know how healthy avocados are and really, really wanted to like them.
Try as I might, no likage occurred. It wasn’t the slimy greenness of the guacamole, that I surprisingly can handle. It was the flavour, or lack thereof.
