Quick and easy chicken stew. Made it because I needed to make dinner and all I had was chicken, tomato sauce and a cabinet full of spices, so I made due.
Quick, simple recipe. Add whatever extra spices you want for zing. Makes about eight 1 cup servings.
I grew up eating ceviche every other weekend in El Salvador's pacific coast during weekend getaways or enjoyed it at family gatherings. Since moving to Canada, the only time I ate ceviche was at Peruvian or Ecuadorian restaurants. Now that my body demands high protein meals, it's come alive in my kitchen and I am loving every spoon full! I hope you enjoy it!

Fast, easy, and oh so tasty "stuffed" peppers all done in ONE PAN! They're not actually stuffed, more like piled on top of but all you have to do is cut up an onion, brown some ground turkey and stir! Personally, I think this needs more peppers. And as someone that HATES vegetables, that's saying something...
Mojo is a garlic based sauce similar to piccata sauce. The same recipe makes the sauce (served with the meat) and, with addition of more orange juice, the marinade for the meat before cooking.
