This is a very good receipe. It's hard to calucate servings. Not sure how much as you make a hugh batch and put it in the freezer. Keeps for 2 month. When ready to serve you take 1/2 c. Serving with 1 C. hot water or serve cold with milk or Soy milk. Let it sit for a couple of minutes to thicken. good with non-sugar applesauce to mix in.
I found a recipe online for rice pudding, and I figured it could easily be altered to be more health conscious. :) No fat, and 50 calories a serving.
fat free and sugar free and even my husband who won't eat splenda liked them. Add other fruits to change the flavor, like dried apricots etc. Next time I'll try wheat.
I also just use cinnamon,cloves,ginger and nutmeg rather than pum. pie spice. I buy cranberries after Thanksgiving when they go on sale and store in freezer to use all year long.
