Yummy Thanksgiving Pancakes
The reason the recipe is small is because I made 1/2 the recipe in regular pancakes for my daughter to eat. You could easily double everything to feed the whole family.
Wonderful compliment to turkey or pork.
Note: Soaking the raisins for several hours or overnight in either juice or rum adds a nice flavor. Also, original recipe called for sugar. I have made it using just regular Splenda, and I have made it using Splenda blend. To clarify, 1 cup of Splenda blend is equal to 2 cups sugar.
These fall-flavored muffins are absolutely scrumptious! Even my non-vegan sister loved them. They are great for an on-the-go breakfast (amaaaazing with a latte!) or quick afternoon snack. I'll even have one for a dessert if my sweet tooth is acting up. This recipe makes 12 puffy, tender muffins. If you want to cut the calories, simply replace some or all of the oil with applesauce and leave out the brown sugar. Muffins are so versatile, so if you need to alter the ingredients at all, don't hesitate!

A few years back I made Alton Brown's Not Your Mama's Green Bean Casserole. For me, it was a revelation in Thanksgiving cookery. "You mean, you don't HAVE to use chunky globs of Cream-of-Whatever soup?" It turned out fantastic every time, but the nutrition of the dish leaves much to be desired. I submit for your approval a lighter, lower sodium version of Alton Brown's fantastic, delicious green bean casserole.
A note on salt: If you're prone to liking this kind of casserole extra salty, feel free to add more kosher salt in the sauce stage. Just be forewarned that it will make the sodium increase.
