This is from the cookbook, Skinny Bitch in the Kitch. The original recipe says serves 4, but i used the whole squash and a little extra vegetable stock and kale to serve about 8.

This is a vegan version of a Chocolate Mayonnaise cake that uses Splenda instead of sugar to cut back on the carbs a bit. It cuts them in about half from the recipe from this site I based it on.

Slightly altered version of this recipe from Isa Chandra Moskowitz's recipe book APPETITE FOR REDUCTION. Namely, switch zucchine for green peppers and changed some of the vegetable weights to what I had at home. As such, overall, the nutritional information is only marginally different to that stated in the book.
