Low guilt, healthy, vegan. Will spark up any salad!
This is a very feeling and healthy soup, takes less than 2 minutes to make and is absolutely delicious.
Adapted from a Simple Living (June 2011) recipe (Grilled Mediterranean Vegetables).
I didn't have all the ingredients, so adapted it to use what I had. I also added some oregano and balsamic vinegar because I liked the flavour. And because it was raining I roasted them in the oven instead of cooking them on the grill.
Eat two of these sweet and filling cookies a day and you will get the equivalent of 1000mg of Omega-3 in the form of vegan flaxseed meal. This is not only better for you than fish oil Omega 3, which tends to concentrate mercury and PCB's but it is better for the oceans and the planet.
