While snowed in, the husband and I decided to use up some pantry and frozen foods. This is what we came up with. The second time we did this we changed it up so feel free to add/subtract anything. This is seriously easy.
Tofu salad is good for picnics or lunch or anytime you want an awesome salad-type sandwich. Measurements are estimates not actual, adjust to taste.

*This recipe is really only a guideline, make something fabulous out of it! Instead of cumin, add a basil, whisper of EVOO, and chopped pine nuts for a pesto feel, or perhaps a bit of sundried tomato, and feta, and serve with steamed artichokes... have fun.

4 g of protien and 3 g of fiber! High in vitamins too! These taste amazing and are so good for you. Pair them with some yogurt and a piece of fruit and they make an awesome breakfast. I make them for my daughter for her snacks rather than buying granola bars with half the nutrition. Feel free to leave out the brown sugar if you dont have a huge sweet tooth like me, the rest of the recipe stays the same! Enjoy....
A vegan version of Rice Krispies treats, using low glycemic sweetener and crisp brown rice cereal. For a snack that's totally free of cane sugar, be sure to use grain-sweetened chocolate chips or omit the topping altogether. Enjoy!
