A veganized version of an American summer staple, with a little extra fiber provided by the additional veggies ;-)

This wonderful easy recipe substitutes "Soia" similar to tofu for Chicken. I prefer the texture of the Soia but you could easily use tofu.
This is one of my favorites of my grandmother's recipes, tweaked only to substitute veggie crumbles for ground beef. Although the cooking time is long, the prep work is super fast and easy, so it really makes an easy dinner. Just add a roll and you have a complete dinner!
If you wanted to make it even faster, you could make the "stuffing" ahead of time and freeze it. Then you'd just have to defrost it, stuff the peppers and cook!
Leftovers are great the next day if kept in a covered dish in the fridge. Any leftover stuffing is also great over rice.
This is a clone of Wendy's chili made with veggie "crumbles" instead of meat.
Cream cheese textured, delicious and healthy sandwich and bagel spread. This makes quite a bit of spread. Can be frozen in small servings. (Had trouble correcting an error in portion size on my recipe. Tried to calculate 8 servings per recipe...)
This is actually pretty good! My skeptic husband says that it would probably fool some people and that it's pretty good, too! I first tried the recipe from the box of Mori-Nu Tofu, but changed a few items to suit our taste. Please feel free to do the same!
