This is my Mom's recipe for Split Pea & Ham Soup. She took parts of 3 different recipes and modified them to create this one.
This was made to have with spaghetti squash, and served with steamed spinach.
Whatever veggies you have; Baby bok choy and/or bean sprouts would be nice too.
This dish can be served hot or cold. It is a terrific side dish, or it can serve as the main dish for Vegetarian or Vegan diets. I especially like it served with Stuffed Portobella Mushrooms.
Use certified gluten free oats for this recipe to be completely GF.

A twist on the classic French ratatouille, using smoked paprika in place of capers and basil.
This isn't exactly a healthy recipe but if you just eat a small wedge, at 250 calories it isn't too bad. It's the dish I make once each summer when the tomatoes are at their peak.
This is a very feeling and healthy soup, takes less than 2 minutes to make and is absolutely delicious.
