There was a Liptons box mix, once upon a time, called Bowtie Chicken Pasta. I've never been able to recreate that successfully but I've come across some good combinations to fill the void. This one has an asian-ish flair.
Very quick and easy to prepare. The longest prep time is for cutting up veggies. Calorie count does not include rice.
This recipe can be made in a slow cooker or on the stove top (set to low). If you cook it on the stove top, be sure to stir occasionally to avoid any burning on the bottom.
Also, please feel free to add more or less coconut milk, lime juice, jalapeno and herbs to suit your taste!
coconut syrup recipe is separate from this recipe. I dump all the ingredients in my crock pot and let it simmer on high for 3 or 4 hours instead of cooking on the stove. Black rice is also called Forbidden Rice and is a healthier alternative to white rice.
My kids love this dish. It's a great way for kids to eat more veggies. They get their lettuce as a fun scoop for their meat and they get to eat with their hands. I usually make some rice to go with this dish.

You can add baked tofu to this, and I will include the step for that. I am not crazy about tofu or any faux meat so I do not include it, but many people would prefer for their recipes to have more protein.
