There is an awesome Japanese appetizer called Naruto. As I am not adept at making rolls with cucumbers, I have taken to preparing this treat as mini cucumber sandwiches. Yum.
I make this all the time, it's a good make ahead for breakfast, or lunch, freeze the rest and then just take out what you need.
