This is a delicious gluten free dish with lots of flavor. With the peas and spinach, you are adding some great nutritional punch. My 13 year old loves it. You can add more of the spices to satisfy your palate, but it's fantastic just like this.
the kind of apple you use here will make a huge difference in the flavor and texture of this dish--i prefer granny smiths.
also, this can be made with regullare flour if you don't want GF--simply switch to all-purpose-flour and increase the 4 eggs to 6 eggs.
