These make great snacks for adults or kids. Add more or less vanilla to taste. More vanilla makes them taste like cookie dough, I think. You can also vary the sizes. I like to make them small so that I can have a lower calorie snack if I just want one.

Spelt and Oat flour are listed and replace the originally called-for all purpose flor, but almost any flour blend will work. You can add anything you like to these muffins- fruit, nuts, cheese (omitting the nutmeg), etc. They freeze well, and are easy to make.
