My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.)
I have seen many variations of this recipe. You can add other spices such as curry powder, cinnamon, fennel, coriander, cardemom, clove, cilantro and other fruits and veggies such as raisins, granny smith apples, apricots, plums, acorn or butternut squash, kalamata olives, all types of peppers, even peanuts. I've seen it prepared with wild rice or couscous. It looks like the possibilities are endless. Let me know if you come up with a different combination than seen below. Make the meatballs several days in advance and freeze them. I prefer fresh basil, parsley, garlic, and fresh ground pepper for a more intense flavor. I also use sea salt (salt can be adjusted for taste and sodium restrictions).
Mother's recipe! When I'm missing my fries I turn to this recipe to help satisfy my craving. To save on calories, I've omitted the 1 tbsp of olive oil suggested. The same recipe using Mrs. Dash instead of the listed spices works great too!
