These delicious, wholesome muffins have a moist and tender crumb and aren't overly sweet. I love them in the morning with a cup of coffee. These are quite large muffins, so you could make 18 instead and that would lower the calories further.
My kids LOVE these tasty, chewy granola bars and beg me to make them. They pack well and can be easily adapted to suit your tastes. Any dried fruit can be used. I find prunes add a real richness to them, but dried apricots, peaches, cranberries, blueberries and cherries are all very nice in these. You can also add nuts, chocolate chips and/or coconut - but my family doesn't miss them in this lower calorie version.
These yummy bars are a delicious energy snack, perfect before a workout! Plus, the fact that the ingredients are RAW will keep in all those good nutrients for an added boost. Yum.
