Since changing my lifestyle, I've tried to find ways to go out to friends and have healthier foods in addition to the typical foods that got me the way I used to be. What's nice is 3 members of the family we visit are also health conscious - so when I bring something healthy they are among the first to try it assuming it will be healthy. This is much like the vegetable pizza you get at many tupperware or other "home sales parties". My youngest daughter and I made this for Christmas dinner, it was a hit. You can modify the veggies to things you like.
A portion controlled dessert that is both light and refreshing.
This is very colorful I've made it using red or green maraschino cherries for different events and effects.
Partially freeze chicken breasts. Remove from freezer and slice very thinly. Place in bowl, pour soy and wine over and let sit while you chop the vegetables. Keep veggies in separate bowls until ready to cook.
Heat a large pan or wok on med high to high heat. Add oil, garlic and then onion, stirring to keep from burning. Add chicken. Cook until done about 4 min or so.
Remove chicken from pan, place in large bowl.
Add carrots to pan and sautee until slightly crisp. Add bamboo shoots and waterchestnuts sautee w/ carrot. Remove from pan place in bowl w/ chicken. Add cabbage, celery, snow peas and mushrooms to pan sautee until done. Mix w/ other ingredients in bowl. Serve over rice. I use Uncle Ben's Whole Grain Brown rice.
This is a delicious African recipe given to me by a friend from an African cookbook. Will keep for a month (at least) in the fridge. Requires olive oil and bread for dipping. Calories listed do not include bread and olive oil.You won't believe how good this is!
A mild red chili with an emphasis on more protein and less fat. When calculating this recipe, I could not find 93% lean hamburger in the database so I used all 90% info.
You can add just about any kind of seasoning to this to make it personal. I just something different to dip my veggies in.
sweet and salty treat! I put 20 mins for prep time, but that is mostly for the time it takes to spoon out the mixture onto the wax paper.
pretzels, puffed corn, and rice chex are low-calorie additions to this snack mix, and unsalted peanuts and sesame sticks give lots of crunch and flavor. This makes a LOT!
It can be made lower sodium by finding unsalted puffed corn (instead of brand-name Cornnuts) but those weren't available to choose. Also, unsalted pretzels and fewer sesame sticks will bring down the sodium count.
Okay, this isn't super low-calorie. But it is easy and delicious in moderation.

A rich, sweet and savory marinara. Serve over whole wheat pasta or rice; alone or with chicken or Italian meat balls.
This is pimiento cheese with a great little kick! It can be used as a spread for sandwiches or topper for whole wheat crackers! Even tastes great off the spoon =)
Made a few changes and this is awesome chili!!! Won a chili cookoff with my version =)
