I was craving southwest salad but didn't want to spend the time making it, so I used a cup of Alexia Chipotle Roasted Sweet Potatoes & Vegetables. This is so tasty and so good and not to mention low in calories!!

With the tofu and oats as well as the lentils and rice there are two excellent sources of complete protein with out the animal fat . And there'll be no dissapointments to the taste buds - they will be delighted and so will you! Wonderful taste and texture. My family loves them.
If you're looking for a colorful, delicious, low fat, vegan, macaroni salad try this one. The bright green and red colors along with the black of the olives make this salad very attractive. Great for picnics. Tweak the seasonings to your liking.
Toss all veggies except tomatoes, spinach, and 1 clove garlic in 1 1/2tbs olive oil, grill or roast, and set aside to cool. separate garlic and slice remaining vegetables into bite size pieces. finely dice 1 clove garlic and 2 tbs white (or other preference) onion and cook with quinoa. puree remaining garlic, lemon juice, 1/2 tbs olive oil, and 1 1/2 tbs water in blender or food processor to make dressing. cool quinoa partially, combine with vegetables and toss with dressing, adding salt and pepper to taste, until all ingredients are thoroughly mixed. finish cooling in refrigerator and serve. makes 4-5 servings.
