This is a favorite recipe of mine. I altered some of the ingredients to make it healthier.
This is a modification from Kentucky Burgoo Recipe I found at simplyrecipes.com I've omitted the meat and includes beans in their place. I've also changed it up a bit for my preferences. I've added Salsa to the mix to kick it up a bit. The worcestershire sauce is not vegan unless you buy vegan worcestershire sauce. I've made it both with 1 quart of broth and with 2 quarts. This makes a lot of soup, and I found the 1 quart fits in my large crockpot a little easier.

Sodium content is drastically reduced due to beans being fully drained and rinsed. You can also use reduced sodium beans if you prefer. All must be rinsed thoroughly.
This was a throw-together recipe for a potluck. I did it as a one-pan prep, first boiling the noodles and vegetables. Then while they were draining, I cooked the peppers, onions and garlic in the same pan. They were added to the draining noodles and then I used the same pan for making the sauce. Everything then was combined into the same pan to mix all together before placing in a slow cooker or casserole dish to bake with the bread crumb topping. Bake for 20 min at 350ºF if cooking in the oven.
Feel free to mix in whatever vegetables you have on hand: broccoli, zucchini/summer squash, etc.
Simple crock pot/slow cooker meal. Easily modify with ingredients on hand and preferred seasoning. Nice comfort food for a cold day. I love using my left over roasted chicken this way.
