This is the best variation I've found for a low carb 'bread' - it's quick and delicious!
In the warm months my kids (and I) go crazy for these when we need something to cool us off in the afternoon. They like them better than "real" milkshakes. The avocado gives this the creamy mouthfeel of ice cream, with all the good polyunsaturated fats, vitamin E and fiber (instead of sat. fat.)
Yummmm...thats all I have to say! Perfect with a glass of skim or soy milk, or an afternoon cup of tea. :)
