It is best to "flash freeze" fresh strawberries and bananas for this recipe in advance and have them on hand in the freezer.
I found this recipe on about.com by Jolinda Hackett. I made these and they were absolutely delicious! The burger patty cooks formed, but just a note that when cooked, they will be a soft patty and not hard like a burger. Also, I used Goya Canned Pinto Beans, and I rinsed them several times with water in a mesh strainer to remove most of the sodium. I also used about 3/4 tbsp of butter to sautee the garlic, onions, scallions, and mushrooms, so the nutrition information has been adjusted to reflect the butter. (The original recipe sautees in vegetable oil)
*(I'm not a vegetarian, but I know that if you do use the vegetable oil for sauteeing, then it adheres to vegan dietary restrictions. Not too sure how the butter affects those standards, but just another little side note)*

This recipe comes from "Moosewood Restaurant Cooks at Home", one of the best vegetarian cookbooks I know. I've modified it to suit my own taste - way more oregano and way less oil.
These contain date sugar instead of regular sugar. Date sugar isn't in the database, so I estimated with a similar amount of dates. They're delicious, but not as sweet as your average cookie, so add a few tablespoons of maple syrup if you prefer sweeter!
No: wheat, dairy, sugar
Healthy fat, lots of fiber, rich and decadent.
This recipe uses canned coconut milk just because it can be a staple in your pantry, but if you have the time, by all means make your own coconut or almond milk and substitute. (You would not need to add the water if you make your own as it will already be thin enough.)

after winging it with ingredients I had available to me and it turned out delish! The dark chocolate is VERY rich, you could go lighter on that ingredient to your taste and I'll advise the same with stevia. This recipe is on the light side for the sweetener as I find it a tad bitter if you add too much. I feel you could always add more later.
This is based on the Basic Green Soup from NPR's "The Splendid Table" by Anna Thomas. Where she uses yellow onion and chard, I substitute Vidalia onion and southern greens like turnips or collards. She garnishes with a swirl of olive oil while I use a dollop of fat-free Greek yogurt mixed with garlic powder.

This is a great, flavorful coffee cake with just 2 grams of fat and 3 grams of protein per serving. I mixed the dry ingredients in one bowl and the wet ingredients in another bowl the night before, then just stirred them together in the morning and baked it. Yummy!
